  • 1 1/2 cups whole-wheat pastry flour, or whole-wheat flour
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup nonfat buttermilk
  • 2/3 cup brown sugar 
  • 2 tablespoons butter, melted
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 2 cups diced bananas
  • 1/2 cup chopped toasted walnuts, plus more for topping if desired
  • 1/2 cup mini chocolate chips

Hash Brown Casserole with Bacon, Onions and Cheese (Cooking Light)

Ingredients:

  • 6 bacon slices 
  • 1 cup chopped onion 
  • 2 garlic cloves, minced 
  • 1 (32-ounce) package frozen Southern-style hash brown potatoes $
  • 1 cup (4 ounces) pre-shredded four cheese blend
  • 1/2 cup chopped green onions 
  • 1/2 cup fat-free sour cream 
  • 1/2 teaspoon salt 
  • 1/4 teaspoon freshly ground black pepper
  • 1 (10.75-ounce) can condensed 30% reduced-sodium, 98% fat-free cream of mushroom soup, undiluted

Souffle Pancake with Apple Pear Compote (Food Network)

Ingredients:
For the compote:
  • 1 cup pitted prunes
  • 4 black tea bags
  • 1/2 cup sugar
  • Pinch of salt
  • 1 vanilla bean, split lengthwise and seeds scraped out
  • 3 wide strips lemon zest
  • 1/2 cup cognac or brandy
  • 2 firm cooking apples (such as Fuji), peeled and cut into wedges
  • 3 Bosc pears, peeled and cut into wedges
  • For the pancake:
  • 4 tablespoons unsalted butter
  • 4 large eggs
  • 1/2 teaspoon salt
  • 3/4 cup half-and-half
  • 3/4 cup all-purpose flour
  • 1 teaspoon grated orange zest
  • 2 tablespoons fresh orange juice
  • 1/2 teaspoon almond extract
  • Confectioners' sugar, for dusting

Light Eggs Benedict (Taste of Home)

Ingredients:

  • 8 slices Canadian bacon
  • 8 eggs

For Hollandaise Sauce:

  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground mustard
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup fat-free milk
  • 1/2 cup fat-free evaporated milk
  • 1 egg yolk, lightly beaten
  • 1 tablespoon butter-flavored sprinkles
  • 1 tablespoon lemon juice
  • 4 whole wheat English muffins, split and toasted

Ingredients

  • 4 large eggs
  • 1 1/2 cups 2% reduced-fat milk
  • 2 1/2 tablespoons maple syrup
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 8 slices whole wheat bread
  • 1 teaspoon butter or canola oil
  • Warm Wild Blueberry Sauce
  • Blueberries (optional)
